Sun Cheese


(Maybe not at all traditional but quite delectable)

½ cup of Raw Sunflower Seeds &/or Sesame Seeds
1 cup water or Rejuvelac

Blend seeds and liquid to a creamy sauce.
Cover loosely in a porcelain or glass container and place in a warm spot in the sun or the warmest part of your home. You can also bring a large pot of water to a boil and shut off. Without submerging place the jar in the pot and cover.
It should be cheese in 5 to 10 hours.
Using Rejuvelac takes less time for the seed cheese to ferment than it does with water. Refrigerate to stop fermentation.
Blend with herbs and spices for dressings.

For yogurt use 1 ½ cup Rejuvelac or water.
