Even the name rejuvelac, sounds rejuvenating!

Rejuvelac is the leftover liquid from soaking grains. It is full of enzymes which aid in digestion. All soaking water from seeds, but not beans, and dried fruit are very healthful. Rejuvelac can stay active for up to 2 months if the grains are fresh and when soaked in spring or distilled water. Good Rejuvelac has a pleasant odor and tastes a little sour. Of course, do not drink it if has odor &/or taste that is offensive. Always use the best quality seeds and rinse them well before soaking. Choose from any of the following: Barley, Millet, Oats, Brown Rice, Rye, Tritical, Wheat, Buckwheat. Place 1 cup of grain & 2 cups of water in a glass or porcelain jar. Cover and soak for 24 hours. Drain and refrigerate soaked water (Rejuvelac). Add the same amount of water as before and repeat. Use Rejuvelac liquid in broths, soups, or just drink as a healthful way to add enzymatic action to your digestive system.
