VEGETABLE SHISH KABOBS
(Another fun treat to explore with children)
Cut into 1 to 2 inch cubes from vegetables and also fruit of choice from the following list
of some examples:
Asparagus, Cherry Tomatoes, Green Bell Pepper, Red Bell Pepper, Onion, Mushrooms (Portabella, Shitaki preferred), Water Chestnuts, ribs from hearty greens like Bok Choy, Zucchini Squash, blanched Brussels Sprouts, Cauliflower or Broccoli, somewhat cooked Carrots, Turnips, Small Red Potatoes, Sweet Potatoes or Yams, Leeks, Apricots, Pineapple, Apples, etc.
Allow the drier foods (ie sweet potato), broccoli, cauliflower, etc., to soak in salted water for about an hour before skewering.
Pack different variations of combinations onto a skewer very tightly, the juicier between the less juicy.
Prepare a bowl for the thick mixture to baste the veggies with using:
Coconut, peanut, sesame oil or unsalted butter
Braggs Liquid Aminos (or favorite wheat free non-GMO soy sauce)
Heat the grill
Using a whisk, or two forks held together, mix together the following nutritious flavors:
Afterwards baste all sides of every vegetable.
Cook approximately 10 to 12 minutes over an open grill or in an oven broiler turning every minute or so
Serve over a bed of dark leafy greens with Millet, Rice or Rice Noodles on the side
