Pineapple Coconut


I would very much appreciate remembering where I got this recipe so I can thank the person profusely!

This mostly raw delight is amazing to the the tongue. Ah, So many yummy things, so little time!

Add 2 Tbls. Plain Gelatin
3/4 cup cold Pineapple Juice to blender.
Turn on high for one second.
Let soften 3-5 minutes.

Add in order:
1 cup boiling Pineapple juice
1 cup rinsed and soaked (overnight) raw Cashews
1/4 cup finely shredded Coconut
1/3 cup Honey or Agave Syrup or Grade A or B Pure Maple Syrup
1/2 tsp Real Salt

Blend until very, very smooth.

Add 1/3 cup Pineapple juice

Fill blender with Ice cubes to 4 cup level

Blend well again.

Pour into previously prepared raw pecan or almond-date crust.

Refrigerate for several hours

Serve plain or with thickened fruit

Variations: Use water & pumpkin with maple syrup instead of pineapple

Use lemon juice and grated lemon rind for delicious lemon cheesecake

Use berries/carob/cacao chips for a delicious difference
